The Corvina, Corvinone and Rondinella grapes are harvested at full ripeness around the end of September. Spontaneous fermentation, without temperature control, takes place in two 10-hectolitre steel vats. Fermentation temperatures range between 22 and 25°C. No further interventions are made on the wine, except for the necessary rackings during the ageing process.
The wine matures in oak barriques and in large oak casks, developing aromatic complexity and balance. No filtration is carried out in order to fully preserve the original characteristics of the wine and the authentic expression of the territory.
Le Quarette is an immediate, pleasant and versatile Rosso Veronese, designed to express the more convivial side of the Valpolicella tradition. It is the result of an artisanal approach that enhances the territory and grape quality, with minimal intervention in both vineyard and winery.
Winemaking is carried out without synthetic chemicals and with the possible use of minimal amounts of sulphites only when necessary, depending on the vintage.

Ageing continues for 16 months in acacia barriques, contributing complexity, elegance and aromatic depth. In the glass it shows an intense golden colour tending towards amber. On the nose, floral and fruity notes emerge alongside spicy hints and dried fruit aromas. On the palate it is fresh, structured and surprisingly balanced, with a pleasant savoury finish that invites another sip.

Spontaneous fermentation takes place in a 10-hectolitre steel vat, with the must in contact with the skins and temperatures between 19 and 22°C. During winemaking, only necessary rackings are performed. The wine matures in acacia barriques and is not filtered, preserving its full authenticity and expressive richness.
Sandro is a rosé wine made from Rondinella grapes, offering a direct and contemporary interpretation of the lighter side of Valpolicella. It reflects a clear approach: giving identity to wines through simple and recognisable names, linked to people and winery work, without distance or artifice.
Even in the vineyard, Rondinella shows its versatility and, when vinified as a rosé in the Valpolicella area, takes a different direction from more traditional interpretations. In the glass it appears a delicate, bright antique pink.
On the nose, fresh and immediate aromas emerge: cherry, Annurca apple, light vegetal notes and a hint of ripe tomato. The profile is completed by delicate floral nuances and a slightly spicy component that recalls the naturalness of the vineyard.
On the palate it is fresh, smooth and dynamic, with a light but well-defined structure. The finish is marked by a pleasant citrus note reminiscent of bitter orange, giving persistence and cleanliness to the sip.
The Rondinella grapes are harvested at full ripeness around the end of September. Spontaneous fermentation takes place in 10-hectolitre steel tanks without temperature control. The must ferments initially in contact with the skins and then continues fermentation without them. Temperatures range between 21 and 24°C. Winemaking involves no invasive interventions other than necessary rackings. The wine matures in steel, is bottled in April and is not filtered.
Meteora is a handcrafted dry red passito wine of great personality, characterised by an important structure and an alcohol content of about 16% vol. It is a wine designed for those seeking depth, character and emotion in the glass.
Made from Corvina, Rondinella, Molinara and Corvinone, it shares with the great wines of Valpolicella the practice of grape drying, but follows its own path, free from the rigid rules of traditional appellations. The result is an authentic wine, capable of expressing the vintage, the vineyard and the winemaker’s touch without compromise.
The production philosophy is natural and artisanal: the grapes are hand-harvested at full ripeness and ferment spontaneously thanks only to indigenous yeasts, without selected inoculations or artificial temperature control.
